Ingredients

For the crust:

  • ½ lb. butter
  • ½ cup sugar
  • 2 cups flour
  • 1/8 tsp. salt

For the filling:

  • 6 eggs
  • 3 cups sugar
  • 2 tbsp. lemon zest
  • 1 cup lemon juice
  • 1 cup flour

Directions

1. Using the Kitchen Chef 30” Cooker, preheat the oven to 350 degrees F.
2. In a bowl place butter and sugar and beat until light
3. Combine the flour and salt, add to the butter until just mixed.
4. Dump the dough onto a floured board and gather into a ball.
5. Flatten the dough and press it into a baking sheet
6. Bake for 15 to 20 minutes, until very lightly browned.
7. For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour.
8. Pour over the crust and bake for 30 to 35 minutes.
9. Let cool to room temperature.
10. Cut into triangles/cubes and dust with’ sugar.

INGREDIENTS
• 2 lb. Chicken wings
• Kosher salt
• Freshly ground black pepper
• Nonstick cooking spray
• 1/4 c. hot sauce (such as Frank’s)
• 4 tbsp. melted butter
• 1 tsp. Worcestershire sauce
•1/2 tsp. garlic powder

DIRECTIONS
Season wings all over with salt and pepper, and coat the inside of air fryer with nonstick cooking spray.
Set air fryer to 380° and cook wings 12 minutes. Remove air fryer tray, flip wings, and cook 12 minutes more. Increase heat to 400° and cook 5 minutes more.
Meanwhile, in a large bowl, whisk to combine hot sauce, butter, Worcestershire sauce, and garlic powder. Add cooked wings and toss gently to coat. Serve hot with blue cheese dressing for dipping.

  • 1 1/4 pounds boneless skinless chicken breasts cut into 1 inch pieces
  • Salt and pepper to taste
  • 1/3 cup cornstarch
  • 2 eggs beaten
  • 3 tablespoons vegetable oil
  • 1/3 cup buffalo hot sauce
  • 1/2 cup brown sugar
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red pepper flakes or more to taste
  • 1/4 cup sliced green onions cooking sprayInstructions:
  • Preheat the oven to 350 degrees F. Coat a 9″x13″ pan with cooking spray.
  • Place the chicken pieces on a plate and season with salt and pepper to taste.
  • Sprinkle the cornstarch over the chicken and toss to coat evenly.
  • Dip each piece of chicken into the beaten eggs. Heat the oil over high heat in a large pan.
  • Place the chicken in a single layer and cook for 3-4 minutes on each side or until golden brown.
  • You may have to work in batches. Place the chicken pieces in a single layer in the 9″x13″ pan.
  • In a small bowl, whisk together the buffalo sauce, brown sugar, rice vinegar and red pepper flakes.
  • Pour the sauce over the chicken. Bake for 35 minutes, stirring once halfway through to coat the chicken with the sauce.
  • Top with green onions and serve.

Ingredients

  • 1/3 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 eggs
  • 3/4 cup bread crumbs
  • 1 cup shredded coconut
  • 1 pound shrimp
  • Oil for frying

Instructions
1. Start with 3 medium bowls. Combine flour, salt, and pepper in one. Beat the eggs in
the second bowl.  Combine bread crumbs and coconut in the third bowl.
2. Dip the shrimp into the flour, then the eggs, and then dredge the shrimp into the
coconut mixing, pressing gently to adhere. You want a lot of coconut on each
shrimp. Set the coated shrimp aside on a plate as you coat the remaining shrimp.
3. Add enough oil to cover the bottom of a large skillet on medium heat. Fry the coconut
shrimp in batches – do not crowd them in the pan. Flip after 2 minutes and fry the
other side for 2 minutes or until golden brown.
4. Place the finished coconut shrimp on a plate lined with a paper towel as you fry the
rest. Serve with your favorite sauce.

Using Maxsonic 10Ltr Air Fryer and Toaster

Ingredients:

  • 2 chickens (whole, about 3 to 4 pounds/1.4 to 1.8 kg each)For the Chicken Seasoning:
  • 1/2 cup/120mL butter (unsalted room temperature)
  • 1/4 cup/60mL olive oil
  • 1/4 cup/60mL oregano (finely chopped)
  • 1 small lemon (zest and juice of)
  • 5-6 basil leaves (finely chopped)
  • 2 teaspoons/10mL rosemary (fresh, roughly chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon/15mL white wine
  • 2 tablespoons/30mL salt (sea)
  • 1 teaspoon/5mL black pepperFor the Glaze
  • 1 cup/240mL balsamic vinegar
  • 1/3 cup/80mL pear jelly
  • 2 tablespoons/30mL honeyFor Extras:
  • 1 large onion (peeled and halved)
  • 1 lemon (halved)

Method:

Preparing the Chickens:
1. Clean up the chickens, removing the giblets and trimming any excess
skin or fatty parts.
2. Rinse chicken inside and out with cold water.
3. Pat dry with paper towels.
4. Combine chicken seasoning ingredients. Rub inside and out and
under the skin of chickens.
5. Put chickens on large tray and cover with plastic wrap.
6. Let marinate in refrigerator for 1 hour.

Preparing the glaze: 
7. Simply bring the balsamic vinegar, pear jelly, and honey to a boil.
8. Reduce heat to low and allow mixture to simmer for 6-8 minutes,
stirring often.
9. Once mixture has reduced by half and takes on a syrup-like
consistency, remove from heat and cool.
Grilling the Chickens:
10. Preheat grill for medium heat.
11. Remove chickens from refrigerator, stuff into each cavity, half an
onion and half an lemon.
12. Arrange chickens onto rotisserie spit and place on grill.
13. Cook for about 1 1/2 hours to 2 hours brushing with balsamic
glaze during the last 30-40 minutes of cook time.
14. Check for doneness (should be 175 degrees F/85 degrees C in
multiple parts) with thermometer.
15. Let stand 10 minutes before carving and serving.

  • 1/4 cup sliced celery
  • 1 shallot, chopped (or pimento pepper)
  • 2 1/4 cups vegetable stock (can substitute with 2 /14 cups
    water and 2 bullion cubes)
  • 1 tablespoon coconut oil
  • 1 1/2 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup raisins (optional)

    INSTRUCTIONS

1. On a medium-low heat, heat coconut oil
2. Add garlic, bell peppers, celery, carrots, shallots until
opaque
3. Add saffron powder (turmeric) and thyme and mix till
everything is coated
4. Add rice and incorporate
5. Add stock (or water and bouillon mixture)
6. Add raisins and scotch bonnet peppers
7. Cover dish and turn heat down to low
8. Leave to steam for 20 minutes till rice is cooked. (Try not
to check it too much and also to not burst the pepper)

INGREDIENTS:

  • 2 large sweet peppers (one red, one green) chopped
  • 1 cup chopped cauliflower
  • 1 cup chopped sweet onion (or regular onion)
  • 1 carrot, chopped
  • 10 cloves
  • 8 pimento peppers, chopped (optional)
  • 2 tablespoons turmeric powder
  • 5 tablespoons sugar
  • 2 1/2 cups vinegar
  • 2 1/2 tablespoons mustard
  • 2 tablespoons cornstarch
  • Water
  • 1 tablespoon salt

INSTRUCTIONS:

1. Make sure that all vegetables are cut to small, uniformed
sizes
2. Cover with water and add salt and mix. Leave to sit in
brine for at least an hour (or overnight)
3. In a deep pot add sugar, turmeric, cloves, vinegar,
mustard and cornstarch
4. Whisk mixture till it starts to boil, trying to get rid of any
lumps that may have formed
5. Lower stove to a simmer for about 10 minutes as you
continue to whisk
6. Strain mixture to get rid of cloves
7. Add back to pot on medium heat and drain vegetables of
water used for brine
8. Add vegetables to mustard liquid and incorporate
9. Bring to a boil then lower to a simmer as mixture thickens
up while randomly giving it a stir.
10. Once at a nice relish texture, remove from heat and
store in an airtight, sterile jar

INGREDIENTS

  • 1 ham, thawed
  • 4 sprigs fresh thyme
  • 10 cloves
  • 4 shoots fresh chive
  • 2 onions, roughly chopped
  • 4 cloves garlic, smashed
  • 1 cup brewed and sweetened sorrel
  • 1 tablespoon brown sugar
  • 2 tablespoons Scotch whiskey
  • 1 tablespoon sorrel jelly
  • 1 teaspoon grated ginger
  • 3 teaspoons honey
  • 1 pinch cinnamon
  • 1 tin pineapple rings

 

DIRECTIONS

  1. Place the ham, thyme, 10 cloves, onions and garlic into a large pot.
  2. Cover completely with water and bring to boil.
  3. Allow the ham to boil for 30 minutes
  4. Drain the water from the pot and place the boiled ham onto a baking rack lined with foil.
  5. Bake the ham at 350°F. For every pound of ham, bake for 20 minutes.
  6. Once out of the oven, allow the ham to rest for 30 minutes.
  7. For the spiked sorrel glaze, add sorrel, brown sugar, sorrel jelly, Scotch whiskey, ginger, honey and cinnamon to a saucepan.
  8. Place pan on medium heat, stirring the ingredients together. Allow the mixture to come to a rolling boil.
  9. Once boiling, stir the mixture constantly for about 5 minutes until it begins to thicken.
  10. Remove from heat, set aside.
  11. Preheat the oven to 400°F.
  12. Gently unwrap the ham from the foil. If you prefer, remove the skin with a serrated knife.
  13. Apply a generous coating of glaze onto the ham. Cover the ham with the pineapple rings, using toothpicks to hold the rings in place. Then, stick the cloves into the ham. Apply another coating of glaze to the ham.
  14. Place in preheated oven for 10 minutes.
  15. Remove the ham from the oven and apply another layer of glaze.
  16.  Place in oven for another 10 minutes.
  17.  Remove the ham from the oven once again, brush with remaining glaze and serve.
