Bacon & Spinach Stuffed Chicken


  • 4 boneless chicken breasts
  • Salt
  • Black pepper
  • 4 oz. cream cheese
  • 1/2 cup spinach
  • 1/3 cup chopped artichoke hearts
  • 1 cup mozzarella
  • Pinch red pepper
  • 4 strips bacon
  • 2 tbsp. oil



  1. Preheat oven to 400°. Line a large baking sheet with foil.
  2. Make slits widthwise in chicken, being careful not to cut all the way through chicken.
  3. Season with salt and pepper and place on prepared baking sheet.
  4. In a medium bowl, combine cream cheese, spinach, artichokes, and ½ cup of mozzarella.
  5. Season with salt, pepper, and a pinch of red pepper.
  6. Fill every other slit with cream cheese mixture and fill remaining slits with a piece of bacon.
  7. Sprinkle remaining ½ cup mozzarella on top and drizzle with oil.
  8. Bake until chicken is cooked through and bacon is crispy for 35 minutes.
  9. Serve!!!
